To me the canapés are a way to judge a great party! If the canapés are amazing then the rest of the night will most definitely be amazing!

You can experiment so much with recipes and how to make a mouthful of food into such a taste sensation. I love to create tiny versions of amazing food. For example, making tiny Yorkshire puddings with some rare beef steak, a dash of fiery rocket and some punchy horse radish. It's an explosion of flavours in your mouth and it always goes down well when you have a glass of champagne in your other hand.

If you have enough of a variation of canapés at a party then I think in some cases it works better than having a sit down meal. It means you can float around a party socialising with everyone with no constraints of sitting next to one person for the whole night. It also means you can try so many different things and such amazing flavours.

There are so many classics when it comes to canapés. Smoked salmon blinis are always a favourite of mine, especially with a dash of tangy them and some crisps black pepper. Its always a winner with a large crowd because it's a combination of such classic flavours.

Another all time favourite of mine is a classic crostini. You can experiment with so many different toppings and flavour combinations that you can cater for everyones needs. I love to mix all sorts of flavours and textures and somehow it always works. Its always such a crowd pleasure and again, just like a blini, they are so easy to hold and eat. There is nothing worse than a canapé that is too big for you hand and such a struggle to eat, they such be easy but simplistic and effortless yet still making such an effort with flour combinations.

One incredibly simple yet effective canapé is always a shot of soup, you could go really inventive with the recipes or just stick to something classic like a fiery tomato soup. It completely depends on what scene you're catering for. It's the kind of thing that looks so inviting but it's such a great way to save time on making a complex canapé.

There are so many ways that everyday meals can be made inventive and interesting, you just have to think about what look aesthetically pleasure and make sure that the flavours work well in combination with the drinks you're serving and also the atmosphere you're wanting to create.

I could go on forever talking about this because I truly think by combing the perfect selection of flavours you can achieve such an amazing outcome and a bit more variation than just the standard classic canapés that a lot of people stick to.
