Chocolate Brownies for a true chocolate lover

These chocolate brownies are such a chocolate overload but also an absolute delight. They are the perfect dessert to satisfy anyone with a sweet tooth. At home they are our go to dessert if we have people coming over, topped with fresh berries and a little ice cream or cream and they are always a great success.

Ingredients:

- 450g golden caster sugar

- 4 eggs

- 200g butter

- 150g self raising flour

- 80g cocoa powder

- 2 tsp vanilla essence

- 100g milk chocolate

- 100g white chocolate

-100g dark chocolate

- 25g crushed hazelnuts

Method:

1. Beat the caster sugar and 4 eggs together in a free standing electric mixer until it forms a light pale mixture.

2. Melt the butter and then add to the sugar and egg mixture in small amounts. Add some butter and then mixture, then continue adding until all the melted butter is well mixed into the sugar and eggs.

3. Sieve the self raising flour and coca powder into the mixture until its all well combined. At this stage you will want to scrape a spatular all the way around the bowl so everything is well incorporated.

4. Add in the vanilla essence and mix one last time in the mixture.

5. Break up all the chocolate and add into the mixture, leaving a small amount left out for decoration.

6. Add the chocolate into the mixture and stir it all in with a large spatular.

7. Scrape the mixture into a prepared cake tin and sprinkle the remaining chocolate and the crushed hazelnuts on top.

8. Bake in the oven at 180 degrees celsius for 35-40 minutes or until the top of the brownie has cracked and a knife comes out clean.
